Season's greetings Truly \ Beef supporters, old and new! So much has changed in the last year. Taylor and I look back and are baffled by how much a little business has grown. THANK YOU for all your support, friendship and business, especially this Holiday season. Over 30 Truly \ Beef variety boxes (and counting) & 10 gift certificates have been shipped/delivered as Christmas gifts. We are starting to see the light at the end of the tunnel and are equally exhausted and grateful. As my brother-in-law put it, "It is a gift of chaos". Hopefully next year Taylor and I can afford to hire on some part time help with our growing number of orders! But for now, I thank my husband for tirelessly cutting styrofoam for our boxes and for the crew and truck drivers at the local UPS store for always letting me steal their dolly, waiting for me and adding that last piece of tape. You guys are life savers!
Anyway, last night was a special night because we partnered with a restaurant we've been collaborating with for over a year. Birch Restaurant in Sheridan, Wyoming. All I can say is... Wow! Travis & Heather Sorenson have poured their heart and soul into their restaurant and it shows in every. little. detail. When you walk in you'll likely be greeted by Heather or find her magically mixing something up behind the bar. And Travis? You can spot him and his crew in their open kitchen creating masterpieces that are as beautiful to look at as they are to eat.
Everything about Birch is an experience. It's all about sophisticatedly pairing flavors, playfully mixing colors and textures, and artfully plating food. So naturally, we were excited when Travis called and wanted to showcase a Truly \ Beef prime rib for a steak night at his restaurant. Here is what they cooked up:
Simple greens side salad with chevre vinaigrette dressing, shaved carrots, radish & pickled onion
Truly \ Beef prime rib
Garlic potato purée
Shaved green beans, sautéed with white wine, shallots and butter
Horseradish cream
& Herbed au jus
