Buying beef directly from ranchers is far better than store bought beef- richer flavor, more tender cuts, the comfort of knowing where your food comes from, etc- but buying bulk beef from a ranch is different than buying from your grocery store and the transition can be confusing. How do you know if you're getting a good deal? Well, it depends on the ranch.
Here's what I mean... Imagine you go to the grocery store and buy a package of nice steaks for, say, $12 per pound for two 1 pound steaks. You know you're trading exactly $24 for those two pounds of steaks. Right?
But now you're wanting to buy ranch direct beef and as you're shopping around, you're hearing terms like "hanging weight" and you're being wooed by large amounts of "meat" and low prices. It sounds like a great deal! Here's why it may not be the deal you imagined...

Competitor "A" is offering you a whole beef for $5 per pound and they a promising approximately 580 pounds of "meat" for that "whole beef". So, you will pay a total $2900.00 for bulk beef. Okay!
But what you don't know is that term "meat" can be used to refer to as "hanging weight". Hanging weight, or carcass weight, is the weight of the animal after it has been killed, skinned & gutted. This includes the weight of large bones and extra fat/tissue that won't be used as final edible product.
Generally speaking, you can count on around 60% of a cow's hanging weight to be actual final product.
With this in mind, let's recalculate that price per pound for Competitor "A". 60% of a 580 pound hanging weight would be 348 pounds of final product. You are still paying a total price of $2900.00 but, in actuality, for only 348 pounds of meat, not 580 pounds. That changes your price per pound to $8.33 per pound. Hmm... Different than you imagined?
